Nicolas Vonderheyden’s journey in viticulture and winemaking is rooted in heritage, precision, and a profound respect for the land. Raised in France on his family’s vineyard and later educated in food science and business, he developed the craft-mind and analytical insight which now inform every harvest.
After assisting at estates in both France and California, Nicolas made his mark managing vineyards and producing small-batch wines in the Santa Cruz Mountains. At Tarwater Creek, his role brings that same experience into play: from vine row to barrel, he ensures each detail speaks of place.
Nicolas farms with humility and intention: no herbicides, minimal leaf-pulling, and a hands-off canopy philosophy that lets the site—with its fog-influenced coolness and coastal elevation—express itself through the grapes. In the cellar, he embraces minimal intervention so that each vintage retains its unique character and connection to the land.
Driven by his French upbringing and the food-centric wines he saw paired with meals at home, Nicolas crafts wines built for the table—wines that are vibrant, balanced, and expressive.
